Domaine de Cascavel
Domaine de Cascavel is a small wine producing estate located in the Cotes du Ventoux AOC and has been operating in a biodynamic manner since 200. The 30 acre vineyard grows on clay soils (argilo-calcaires) and allows for a perfect environment to produce Côtes-de-Ventoux wines. The rising star of the Ventoux, this biodynamic estate (in conversion) produces small quantity, small yields, hand-crafted wines.
A 35 acre estate divided into 22 parcels planted with vines between 30 et 50 years old.

Cuvee Jade - Blanc
This white wine is the fruit of late harvest, 80% picked in October and the rest at the end of November. Fermentation lasted a total of 3 months. 30% of the wine was aged in 1 and 2 year old barrels. The rising star of the Ventoux, this estate produces small quantity, small yields, hand-crafted wines.
35% Ugni Blanc, 25% Roussanne, 25% Grenache Blanc and 15% Clairette |

Cuvee Les Amidyves - Rouge
"Spice, black cherry and currant notes gain steam through the finish with hints of licorice and sweet earth.”
The Amidyves Cotes du Ventoux red made from organic Syrah and Grenache is a particularly fine, elegant example of the wines being produced by young winemakers Olivier Baguet and Raphaël Trouiller who are based in Villes sur Auzon which is near to Mazan. Aged for 9 months in new, 1 yr and 2 yrs barrels (40% - 40% - 20%) with regular lees-stirring. Made from a strict selection of older vines from high elevation hillside vineyards.
